WHY HINE'S COGNACS
ARE EXCEPTIONAL ? |
Strict regulation
1) THE WINE
We work only with 50 meticulously chosen winegrowers,
out of some 8,000 in the whole Cognac region. These
few have become, over many years, our close friends
and colleagues. |
2) FERMENTATION
A perfectly natural fermentation yields a wine of low
alcohol, which is carefully racked to retain the fine
lees, adding complexity to the final cognac. |
3) DISTILLATION
Only the "heart" of the two pot-still distillations
is selected. |
4) CASKS
All our cognacs are aged in small hand-made barrels
of French limousin oak. |
5) AGEING
The selected cognacs are aged separately in new casks
for the first eight months and then in older barrels
before blending. |
6) BLENDING
The Cellar Master follows the development of the eau-de-vie
closely.
After blending, the finished cognac is left to "marry"
in large oak vats, perfecting the blend before bottling. |
